A young pullet, not yet laying would have pink colored combs and wattles. A pullet/hen that is laying will have bright red, but that will only last about 3 to 4 years and it goes back to pink. I would think that you should be able to know the difference between a young pullet and old hen by looking at the feathering and skin. I would only keep an old hen if she is a good setter and mother.
 
I think laying can also help you tell, an older hen would lay less and for a shorter season than a young one.
But as they say, your mileage may varry because some hens just lay less.
