You and I sound like we are a bit in the same situation. We'd like to start showing chickens, but are finding it difficult to find birds that will win that we can afford.
The breeder pages talk about how they sometimes have to hatch 100 eggs to end up with 10 that might be worth keeping for showing and breeding. You can understand where they cannot guarantee that an egg or chick will be a show winner, even out of very high quality parent stock.
Also, there is a lot of expense in hatching so many birds, caring for them to an age where a selection can be made as to quality, and then caring for them until they reach breeding age. To keep going financially, they will have to charge a bit more for their potentially high quality stock.
Your best bet may be to go to a show in your area and review the breeds that are doing well there. If you absolutely want to win, you might as well pay a lot of money for a few proven show winning adults and start from there, as opposed to 100's of mediocre chicks/eggs.
The folks on these pages really enjoy their birds. It wouldn't surprise me if they are reluctant to share the results of years of work in breeding birds with a bunch of obvious newbies like us.
We may not care for them correctly in our inexperience, and these birds have been friends and pets for a long time.
I am very thankful for their advice and don't mind if they get a little entertainment out my my new fanatic enthusiasm and inept mistakes. I'm sure they were in this spot once upon a time.
Stick around, the birds you need will become available eventually, but it will take time. Most of these show people have been working on their flocks for a long time.
