As long as the needles aren't green then sure.
The only issue when they are green is sticky feet and butts, you do not want that.

Yes, use them up in the coop and the run.

My coop and "run" (pens) are combined. We use a variety of materials - but pine straw, pine cones, small limbs and branches are a part of that.
