Everything in moderation.

If you have access to milk, why not make yogurt? Miss Prissy has wonderful recipes for making milk related goodies. Many BYCers like using yogurt because of the probiotic benefits.

I used to have lots of extra milk and would make something I thought of as cottage cheese. It wasn't for me but the dogs, cats and chickens loved it. And, the hens turned it right into eggs, it seemed.

There were desserts that Mom used to make with rennet tablets. (Here's a collection of recipes.) But, I just used 1/4th tablet dissolved in a little water with a gallon of milk. After it sat in a shallow pan covered with a cloth for most of the day, it could be cut up and given another hour or so. Then the whey could be drained. Out to the critters the cubes of "cheese" would go. It was very well received
