So, I may be adding a couple turkeys to my flock. However I have an extra coop I was considering for them. It is 4 feet tall. The run and coops are placed against a three sided run in shed.
I am wondering, can I herd them into the 4 foot tall coop or do they need a roost? Will they just roost on top of it and subsequently get out of the fence (as the coops make up part of the fenceline)?

We have a 6 or 7ft fence for our Turkeys and they still fly over.

So yes unless you put a cover over the top, they'll just fly out.

One of the keys to keeping turkeys inside a fenced area is to not have a top bar on the fence. If there is a top bar (pipe, fence rail, etc.) the turkeys will hop up on it and invariably get down on the wrong side of the fence. Clipped wings will not prevent them from hopping up on a 4' to 6' tall fence.

The other key is to have a big enough area with sufficient desirable roosts inside the fenced area.

My perimeter fence is a 6' tall 2"x4" welded wire fence. It encompasses an area that is approximately 2 acres. Their run is 50'x100' of the same style fencing. These fences do not have a top rail of any type.

On the rare occasion that a turkey gets outside the perimeter fence it is because they flew up in a tree and then got down on the wrong side of the fence.
