Can they lay more than one a day?

I have two giant cochin hens and I've been keeping careful track of how many eggs I get each day. The first week they were laying, I got maybe one a day on average. Then it quickly moved to two a day. Now they each have their own nest and I was getting used to finding one egg in each nest every day. Then, yesterday, there are two eggs in one nest and one in the other! Is it possible that one of my hens laid two eggs in one day?!

I've questioned everyone else who lives here to see if they're playing a practical joke on me and everyone seems to be genuine in their response to me that they didn't do it.

From what I've read, it's possible. Especially if you only have 2 laying hens and 3 eggs!

Yes it is possible. My naked neck hens are laying 1-2 eggs a day each. So I can get up to 3-4 eggs from them.
