I was wondering if it was possible to breed different types of quail, such as the coturnix and the california quail, or button and bobwhite. Not just house together, but have them mate and get like mixed baby chicks?

They're different species, so I don't believe you can get chicks from them. They are also unlikely to get along, so you're risking injuries and deaths.

California Valley and Gamble can cross-breed, but their offspring will be infertile, or so I've read. Like mules.

They are all different species, you would be hybridizing them.
As @Serin mentioned, The kings (buttons) and japs (coturnix) are in a different family to the californias and bobwhites, so I don't imagine it's at all possible to cross them.

Even if you can cross some, like californias and gambel's, I can't imagine it's particularly helpful for the species anyway.
