my mother says that you can't handle a chick that has just hatched but I am not sure if thats true... is it?

You can, but there is potential for harm to the chick. Your mother probably wants you to wait until the chick is dry and fluffy so it won't get chilled. Also, newly hatched chicks (or babies of any species) don't need to be handled casually as if they were toys. Wait for your mother to give you the go-ahead and play with your chick carefully, and have fun!

My newly hatched fuzzbutt GrandChick could run like the dickens the day after the evening it hatched. Faster than *I* could get to it, when it found a chick-sized hole in the coop and dashed out into the run. Took me 3 hours to catch it - it ran into some blackberry brambles - and I handled it with lots of love taking it back to its broody Hatch-Mother. I was out of breath and very sweaty, and I couldn't believe how fast a black & tan cotton ball with a beak and legs could move!
