Ok I have found a recipe to fresh pack green butter beans.... can I put a piece of smoked fatback in the jar before presaure canning? I have searched and searched this site and can't find anything close. I usually freeze them but I would like to stop using the freezer so much. My MIL doesn't like canned butter beans but I am thinking if they are fresh or raw packed with the fatback all you would have to do is warm them. ANY ideas would be great. TOTALY new to the canning world.....can you tell?

Yes, you can put fat meat in. I usually put a few beans in the bottom of the jar, add the fat meat, and then fill with beans and fluid, then can it. That easy. Sounds good. Now you have me wanting butter beans.

Well you are from the south. You have to have butter beans at least ONCE a week and if you have enough, everyday of the week! Apple smoked meat REALLY is the best! And thank you.
