Also check out gardenweb.com and go the garden forums,then to the harvest forum, they are a wealth of info, and will teach you how to can safely. Make sure you use up to date recipes for canning and not any old recipe from the internet. (even old family recipes need to be updated) It is fun and a lot of work, but opening a jar of something you grew in the middle of winter is well worth it!
If you are going to be pickling and water bathing you can use any pot large enough to cover the jars with 2-3 inches of water and make sure you put something in the bottom of the pot so the jars are not touching the bottom of the pot! I have tied old jar rings together to place in the bottom of the pot first!
Get a Ball Blue Book, make sure it is up to date. Ace hard ware carries them too!
If you plan to can meat, and low acid foods like beans, a pressure canner is a must.
Amazon has good prices. There is a lot to learn about choosing the right pressure canner for you so do a little research before you buy one. Make sure you buy a pressure canner and not just a pressure cooker!
