I'm starting my first run of chickens, and they are close to being ready for caponizing. And was wondering if this will also stop them defending themselves from predators too. It follows, but if anyone has seen differently?

They may be less assertive due to the lack of testosterone, but female chickens can be 'protective' too.
How old are these birds, in weeks?
Is the plan to slaughter these boys for meat, if so at what age?

Yes we do plan to eat them, after a year or more. At this point they are close to 3 weeks, so we plan to castrate soon. Basicly as needed we'll cull them. We want to free range, in our back woods. But also don't want to leave them completely defenceless.
