capons fryer, or roasters

I'm trying to order some meat bird but what is the different between capons fryer and roasters. do they taste different or are they different sizes? i'm thinking about getting Cornish Roaster or Jumbo Cornish X Rocks from mcmurray hatchery. are they a good choice. do anyone knows a better hatchery

most are differents ages or sex.

Fryer are around 8 weeks old, roaster after 12 weeks. Cornish game hens are only 4 week old females. ALL these are cornish X rock cross.

Capon are rooster that have been cut....

one more question if i get a rooster will he be big enough to dispatch before they start crowing

I was told if its a cornishX the roosters get bigger than the hens and thats why males cost more than females. I got mine ( just ordered them yesterday so havn't arrived yet) from Welp and the total was 39.00 even. Mcmurray was almost 50 but I live in TN and there aren't many close hatcheries...
