Capons

Why would you capon a cornish cross chick? Isn't one of their possitive attributes that they are ready to butcher before the hormones kick in?
 
Ditto- I dont know if its true, but I intend to find out. The catalog shows a 14lb bird grown via caponization at 14 weeks or so - The wapsie brand of commercial capons is also a high performance hybrid (I think they never confirmed that - but the carcass& pics look that way.) - their birds are harvested at 16 weeks 8-10 pounds (and very tasty too).
If doing this project has taught me anything it is not to make assumptions about chickens - I had another of the La Fleche last night - I was hoping this one would turn out to be more along the lines of what I expected - NOPE. Tender -yes, good -yes, great - no. The Delaware I roasted along side it however was awesome! Going to have to do some more of those too.
