Carass disposal in winter?

Hey guys, I am really wondering more for larger livestock (like goats) than chickens. We rarely lose more than one bird in winter- and having enough property we just carry it far far away to the edge of the 12 acre lot and let nature run its course. But what about when we get goats? Or a pony or something?

Anyone know who you call or what services exist for that? We're in the north east and dont have a back hoe, soooo burial is out of the question, we're not set up for composting, and there's a prohibition on bonfires....
 
We're way out, but in this particular area we have neighbors across the road, and down the street a piece. the 12 acre lots is the inlaws- we transport our deadies up there for disposal in winter. We're on three acres, with a large trout creek at the back of the property. So we're quite limited.

Who would farmers call for such a thing? The county extension? there has to be some sort of office or something that takes carcasses for rendering for a fee...
