No, you don't have to castrate turkeys. Castrating birds is extremely difficult anyways, seeing as how the testes are located inside the bird's body and require actually opening the bird up to get them out. I personally don't recommend it at all.

This is called caopnizing. It is fairly easy to do, but does requires a small surgery. I would not recommend this on a turkey. They will get large enough anyway.
