Caulking OSB seams-what to use?

Staple some tar paper over the entire roof area and then cover with shingles, rolled roofing, metal panels, etc. The tar paper will keep any moisture that makes it under the outside roofing materials away from the OSB.
 
You're going to cover the OSB with shingles, aren't you? If so, just shingle properly and no caulk is needed.

If you do not shingle your OSB roof (or cover it with something else waterproof -- a tightly stretched tarp or vinyl shower curtain, with the edges wrapped around to the underside of the roof edges adn tightly affixed there, is an ok *temporary* solution) then caulk is not going to help, it will die a very early death (after sagging and leakng like a sponge). Even if you paint it. Really really.
