2 cups cold water (filtered if need be) and 2 cups rye flour.
Mix, and place in a gallon jar with a towel on top.
Everyday for 6 days, feed it with 1 cup of cold water and 1 cup of rye flour.
On day seven, pull off 2 quarts of starter and place in mixer.
Add 13 cups of Spelt or White Wheat ( not processed, its a real variety) and 1 TBLSP of Sea salt, along with 1.5 cups of cold water.
Mix for 5-10 minutes.
Dough should be sticky.
Form into rolls, or 5 loaves of bread, or a pizza crust.
Let rise for 4-12 hours.
Bake at 350 till done.

Expect a learning curve. You may get a loaves that are bricks at the beginning. You can cut this whole recipe in half if you want to help with that.

After you take out the start you need for bread, feed it as usual for another 6 days.
Make bread every 7 days.
