So here we are in our new house in Lakeside, and we see someone posting on Facebook and asking if anyone wants to buy duck eggs! I bake, and I've heard that duck eggs are really good for baking so I contact the lady and get 6 eggs. We ate 4 of them scrambled and 2 hard boiled...I wanted to get the taste before doing anything fancy...never had any before. I noted in the hard boiled that the yolks were very rich.
Today the lady asked if I wanted a half dozen more and I said SURE! She brought them over and when questioned, told me that she has a "large, gray duck, don't know what kind, her name is Karen." ...and that Karen lays an egg a day. Is that normal for ducks? I mean...it's winter, and it's a duck. I didn't think they laid that regularly?
