Chicken Bacon Pasta Salad
1 lb. Pasta, cooked, drained and cooled
2-4 lg. Pickels, chopped
1 Med. Red Onion, chopped
1 lb. Bacon, cooked and chopped
8 HB eggs, chopped
6 Cups Chicken, cooked and chopped
1 lb. (Cheddar) Cheese, shredded
(can also add black olives or add/omit anything you want)
Sauce
4 Cups Mayo
1/4 Cup yellow mustard
2+ tsp. salt
1/4 Cups +2 Tbls Sugar
Pepper
1/8th tsp. paprika
Rice vinegar (I think 3/4 C-1 C... I was writing everything down and didn't realize I forgot to write down how much vinegar! and I dont remember, it was late when I was making it! Just mix it and taste and add more as needed!)
I mix the sauce and pour it over everything else, then mix it all together. It will be saucey, but I let it sit in the fridge overnight and the pasta and everything else absorbs the sauceyness!
Makes A Lot! (maybe halve the batch if making for the family!)
I sliced the onions this time and I didnt really like it!
