Chicken breed advice?

Welcome! I agree about the Mediterranean breeds, and Fayoumis are very cute! Rather than getting all one breed and color, try a mix of several, and see who you like.
Heat is difficult for chickens, so plan on shade, fans ice, everything to make them more comfortable. Insulating the coop roof will help too, and a big enough walk-in structure to have excellent ventilation.
Get on your state thread here, and talk to experts, maybe at your state veterinary college, or hatcheries, or other successful flock owners.

Leghorns are good but are rather expensive I would recommend a blue Andalusian or if you have any way to make your coop a little cooler a black australorp even though they get to be pretty fluffy they should still be good in hot weather but would definitely say blue andalusian they are very friendly and cold (not that this is a problem in Texas) and heat tolerant.
