Getting a nice rooster can be challenging... Sometimes. I would keep more than one so you can choose who's temperament is best for your family, it's best to decide when they're sexually mature. Have your kids handle the chicks so they're never scared of them and so that they don't see the kids as a threat when they get older.
I have 2 roosters and 8 hens. One rooster doesn't want to mate with anyone, he just wants to follow me like a dog. The other rooster is 4 months old, 10 lbs, and 2 feet tall... He's a jersey giant and he's the most sexually active. They're both nice but we raised them from chicks. We plan on hatching some of the fertile eggs in the spring to see what their offspring looks like plus we are adding more colored egg layers in the spring so he will have more girls. Our roosters don't fight probably because they were raised together and are siblings.
See if you can find hatching eggs near your area, I have several farms within 10 minutes that sell them for a very decent price and their hatch rates are very good. Look on craigslist or call around to local farms, you may be surprised what you find.
Whatever you choose it will be a learning experience for the whole family.
