Here's my mother's delicious chicken casserole recipe. It is a "from scratch" recipe in her own handwriting. We had this often growing up and it is GOOOD! Not sure where she got this recipe. It may have been my grandmothers recipe. At any rate the recipe is at least 50 years old and may be much older.

I have several hand written recipes too. They are the best and each time I make them it takes me back to my moms kitchen. The good ol days!

Now, THAT is some serious comfort food! It really sounds wonderful. Very fatty, but that's kind of the point.

I bet you could do a really nice version with much less fat. It wouldn't be as wonderfully flavorful and comforting, but still really good. This recipe gives me lots of neat ideas--thanks for sharing!

I'm wanting to make chicken and turkey sausage this fall, and I'd had the idea of grinding the skin into the sausage to make up for some of the fat the meat would be missing...this recipe suggests that that may be a reasonable thing to do.
