FYI, we are members this growing season of an CSA (Community Supported Agriculture) farm and received a half dozen fresh eggs yesterday with our share. We decided to give two a boil and see what we've been missing. When my wife was peeling them she said, "maybe boiling isn't the best method for cooking fresh eggs"; meaning that they were difficult to shell and we lost a good bit in the "process of extraction". I was a bit prepared for that possibility, as I'd read another BYC post yesterday regarding just that in pursuit of the best method for peeling (fresh) eggs. Regardless, the eggs (what we got) were delicious and inspiring. I'll visit that post again today as I'm sure the generous members of BYC have been more than helpful with suggestions.
