I found my seabright dead with her jaw eaten out rather clean and no other injuries. She was 2 years old. A rat maybe? Any tips on how to catch the little bugger?

Is there any way a,small predator can get into your coop? Some rats will go after feed, but some are meat eaters, and can bite toes. I would look at something like a weasel or raccoon, a possum or skunk, or a cat. If you have a gamecam that you can place inside your coop, it may help. Use rat poison in a locked trap outside your coop to control rats, if they are a problem, or a trap set inside a cage that chickens cannot get to, at night when food is put up. Sorry for your loss.

Good idea. I'll try that
