Chicken making weird sounds

My barred rock hen Piper (Almost 3 years old) sometimes make a odd-ish sound when I try to pick her up, it is kind of sounds like a whistle that is very light. She doesn't like being held. She also has no bugs, infection or disease. Her crop is normal and all that. Is this just a chicken that gets stressed easily or do you think it is an underlying issue?

My sisters hen, Celestia, does the same thing. Its a sign of annoyance and delicacy of being held but they are tolerating it.
