How can you tell if your chickens have like mites or bugs? And if they do what do you do?

You'll notice if your chickens has bugs by parting the feathers and seeing black moving dots. Also, pulling feathers out, lifelessness, lack of appetite and drop in egg production are other signs.

Prevent them by making sure your chickens can dust bathe. This is the most effective way. You may have to use a powder of some sort to treat them.
