Chicken Sausage recipe wanted!!

Well, it's time to test out my meat grinder and sausage stuffer that I got for Christmas

I just need a good recipe for some chicken sausage. I really like apple/chicken sausages but would appreciate any recipe anyone may have. Thanks so much!!
