Chicken, Tomato, Basil Cold Pasta Salad

I bad this last night on the fly. I brought in a bucket full of cherry tomatoes so I'm trying to come up with new fun things to make with them. PLUS the heat has been horrible, and I wanted a cold dinner.

This fed 3 with left overs

Grilled Chicken, Heirloom Tomato and Basil Cold Pasta Salad

1 lb boneless skinless chicken breast grilled on the grill, or on the store top in a cast iron pan (Cooled and then sliced into strips)
1 16oz package of pasta, your choice (boiled and cooled)
2 cups heirloom cherry tomatoes
1/2 cup fresh chopped basil
1 Chopped yellow onion
Toss together and then add homemade dressing

Dressing:
1/2 cup balsamic vinegar
1 tsp kosher salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp mustand
1/2 cup evoo

Refrigerate and enjoy!
 
If you have a dehydrator, try this: we cut cherry tomatoes in half last year and dried them. They were delicious. You could probably use them in cooking, but we just ate them as snacks... tomato chips!
