Chickens becoming more timid over time?

Hello!
We got our chickens last August, two black bovans, two sussex and one grey one (dunno the english name sorry). Soon it became clear that the bovans were curious and lively, coming close and not being shy, while the sussex were always uncomfortable with touch or the like, one even doing everything they could to evade our hands. However, recently I have noticed that the whole crew seems to be very jumpy and shies away from any touch coming from us... why could that be? There has been no changes at all except for the seasons... any ideas? Thank you guys!^^

Chickens in general don't like being grabbed or held. Mine all shy away from my hands. It's a normal reaction from a species that everything likes to eat.
