Chickens burying eggs

They actually have 2 roosting areas not including the ceiling trusses, two 30lb feeders and a 8 gal waterer in there, it's actually two connected rooms I made into one coop, first room has nesting boxes, small roost, water and one feeder, other room has big roost and other feeder.

That looks pretty good to me, not sure why some birds won't use them.
You could try some curtains, or a front with just a circle(~10" dia) opening entrance to make them more dark and cozy?
Maybe deeper bedding in nests?

Is this a different bank of nests....openings look a little shorter?

No same bank of nesting boxes, there is a overhang and from that angle it looks smaller, my original plan was todo 16 boxes, kinda like a cake where the roof of the boxes below would be the floor of the boxes above, I made it where they can jump from the lower set of boxes to the upper set and still have a 4' ledge on the upper set, the lower ledge being larger so they could hop more vertically. But I never got around to building another 8 boxes, maybe in the spring when I start another 10-20 chickens. Being there laying on the ground in the open I don't think they care too much for cozy.

I did deepen the bedding a few weeks ago in the nesting boxes from 1-2' to 3-4' in each box, but it didn't seem to attract any more to the nesting boxes.
