you have far too much ventilation which is why your humidity is escaping as soon a you add it.

Heat rises and takes humidity straight with it. Cover the incubator. A couple of 1 cm holes is all you need for ventilation unless humidty builds up too much then add some more holes

edit: this will increase temps so monitor temps for 2 hours and adjust after tweaking.

Do you add warm to hot water? it usually increases humidity fast. I'm running out of ideas lol
