Cholesterol reducing enzymes in eggs???

Not sure if this the right forum or not, but here goes.

I was told by the friend that sold me my chickens that the eggs contain some sort of enzyme that will actually reduce your cholesterol levels IF the eggs are eaten before they are refrigerated. He swears that eating fresh eggs everyday has dramatically reduced his cholesterol level. To the point that his doctor now wants to buy eggs from him to use in some study.

Has anyone heard of this before? Is there any science to support this? Is it even safe to leave eggs unrefrigerated and if so, for how long?

Bob! I don't have the info on the cholesterol for you but.......I use to worry about eggs not being refridgerated until I joined this site. We have had members who have lived on boats without refrigerating eggs. As long as the eggs are not kept in a hot place ( you can google or do a search above to find the exact temp.)they are fine!! I no longer keep mine in te fridge at all. I keep them in the basement where it is a contant temp. Also, my eggs don't last more than a week or two and they are gone. Use the oldest eggs first of course. I will try to find you the info and post a link for you.
