Clean Coop=Clean Nest=Clean Eggs That Don't Need Washing

If you research, there is much information that washing eggs actually can cause the bacteria to permeate the porous shell. Of course, if my eggs had poop all over them, I would first dry scrub, then wash in running water. But this is risky, also.

But with proper refrigeration this isnā€™t true.

It's at the washing step that this happens, so refrigeration has nothing to do with whether the egg is contaminated

I researched this, and to my surprise; Washed and sanitized eggs are illegal in Europe. By washing it you remove the "cuticle" which makes it susceptible to bacteria. For customers, I will slightly clean the outside, if needed, and not refrigerate, but I will inform them of my practices, if asked.
I personally will never wash fresh eggs and I will let them sit on the counter for up to a week.
