By the symptoms. No eggs, not eating, weight loss, and the fact that she would let me pick her up without fussing.

Of the hundreds of possibilities, I wouldn't automatically suspect coccidiosis with those symptoms. I thought you may have had a necropsy or other medical diagnosis.
As @Eggcessive suggested, very unlikely in a mature bird. Unless there was another serious malady present, or the bird was new to your property, she would have long become resistant to the species on your property.
Keep in mind, coccidia will almost always be present in the digestive tract of all ground dwelling animals. A necropsy would determine if the infestation was severe enough to cause death.

How old are the chickens? Coccidiosis is common in young chickens, but not so much in older chickens. Symptoms are lethargy, runny or blood tinged droppings, no appetite, and a hunched or puffed up appearance.

Chickens are 3 yrs. old. Any ideas what else it could have been? I sent a picture of poop if that helps. I really am at a loss.

Did you ever discover the cause? I'm in a similar situation. My vet said Egg Peritonitis, but I just don't think so! He said that it's common in heavy egg laying breeds at about 3 years.

I had 2 3-year-old chickens die this way, mysteriously and suddenly.
