cold eggs

I know I have read it here, but can you hatch eggs that have been in the fridge? How long can you keep them in there before the fertile ones are not going to grow?
Can you also hatch eggs that are gathered from the coop in cold weather at the end of the day or the next day?
Lady at the feed store said one day in the fridge and the embryos are toast?

I have heard of people that hatched eggs that had been in the fridge for 2 weeks !

Ok Thanks I thought I read that. I like to know my facts before I challenge the statement of the feed store lady

So to continue on this, how long should I keep them at room temperature before I should try to hatch them?

My turkey just started to lay and she is only laying one every other day. I know she will stop when she has a clutch of 12 or so but how long is too long before a bird starts to set?
