Cheese curds are created similar to the process of cheese but rennet is added to make it group, then they are cut, the whey is separated from the curd to leave a cheese curd.
They come in lots of flavors, garlic, buffalo wing, cajun, honey bbq, jalapeno, maple bacon, taco, ranch, etc. You know they are fresh if the squeak when you chew them.
