Collecting eggs from one hen.

My Golden Comets have just started laying so the eggs are still small. However, I have one New Hampshire red that is 2 years old. She's pretty reliable to produce an egg a day. Can I just collect one egg a day from her until I get 6 eggs to incubate. If I am understanding right they don't start the cycle until put in the incubator. I have a Brinsea and it holds 7 eggs. I would thing the young hens eggs would give me problems because some are double yokers still, Advice needed. I'd like to get some chicks before the bad weather comes to Maine.
 
I am assuming you have a rooster and your eggs will be fertile. Store your eggs at room temperature in a darker area of a cabinet and they will keep well. When you get 7, THEN SET THEM INTO INCUBATOR. Remember that not all will always hatch.
