collecting eggs to hatch

Hi Kids want to start some eggs in our incubators but temps are very cold here are they viable to hatch as long as they don't freeze? Or do they need to stay above a certain temperature?

Below this threshold ice crystals will start to form in the egg and permanent damage may be
done to internal structures. Eggs may lie for some considerable time in temperatures close to
freezing without suffering damage."
