Thank you so much!! This week the pearl has been getting a darker head, (sorry about the red light) is it looking more male? Or wait until egg/crow? I swear I have quail experience, just only with pharaoh's and tux/tibetansThe first bird is eb/white for sure, I’d say also roux with that reddish tinge in the pictures and you mention gray so maybe something like Andalusian which is silver/gray but allows the base color to show through, so a scarlet (eb/rough) Andalusian tuxedo? Gray color could also be silver or Blau.
The second is an Egyptian male (pharaoh roux), all his daughters will be roux if bred to non roux carrier hens, sex linked recessive!
The third is a pearl (Italian fee) probably a hen if those chest spots are still there, a little tan/cream/beige can bleed through the fee, especially if heterozygous. Mask color isn’t reliable in sexing Italians with fee as it can make the males rusty mask black, pretty birds!

The grey/Andalusian is looking more reddish this week but I wasn't able to snap a good photo, I can get some tonight if that would help better identify color!
