I am just wondering what color an egg would be if I cossed an australorp with an araucana for example

This is easy as long as the Araucana is pure for the blue egg gene, which a true Araucana will be. Green.

The base egg shell is either blue or white. Since blue is dominant, if the hen has one blue gene, the base egg shell color will be blue.

Many different genes affect the brown. How those genes come together and interact determine what shade of brown. Brown on a white base color gives you a brown egg. Brown on a base blue egg gives you green. If there is no brown, then the egg will be either blue or white.

The Araucana should not have any brown, so it would lay a blue egg. But the Australorp will contribute some brown, so that will cause the egg from that cross to be green. The exact shade of green will depend on how much brown is added.
