My question is regarding average amounts of eggs. We go through a minimum of 4 eggs a day usually 6-8 depending on what I am baking for our large family. I want chickens that are gentle and calm enough my kids can gather eggs and help feed/water them but also lay 250+ eggs the first year and 200 or so the second year etc. If I can avoid it I'd rather not go for Leghorns or birds similar. The Columbian Rock X Reds are $2-$3 cheaper per chick from the hatchery we can order from than RR, bard Rocks, black astralorps and so on.
Can you do a review of these birds?

Do you perhaps mean Rhode Island red X Colombian rock? It may seem like the same thing, however in the listing of crosses or breedings the male goes 1st over the female. And the way I have written it would indicate that you have are talking aboyt red sex links... the way you have written it would just be a crossbreed bird and across that most hatcheries don't offer. As you are looking for feedback on these potential birds, it would be very helpful to make sure that we're all talking about the same thing as we're offering that feedback
 
I have some Calico Princess from Hoover, they lay a large brown egg, supposed to lay up to 290 a year. They are winter hardy and a large size chicken, they are as big as my white Jersey Giants at 1 year of age. Mine are also docile but I do spend a lot of time with my chickens.

I believe I have been raising these from my local Canadian hatchery for a few years… expect about 5 eggs per week from each hen excluding moulting and high stress circumstances… they are lovely quiet hens esp when a kid reads his chicks stories for hours n hours.
