My duck girls are going to be layering soon and I would like to cook with some of the eggs. I hear that they are richer (?) than chicken eggs and I am wondering if anyone out there can give me some pointers.

Thanks for the help

Thats all I cook with our girls give us 12-14 a day and I hatch out the chickens eggs or sell them so I use the duck eggs. Some people might figure out hte difference in size compared to a chicken egg but I just use one egg for one egg. My neighbor just came down and purchased 60 eggs just alittle while ago they are for eating as well. The only difference I find is that they scramble alittle harder than a chicken egg.

thanks for the feed back. Has anyone baked bread with duck eggs instead of chicken eggs. I'm thinking of trying it in Challah.
