We are trying to figure this out too. We live next to an organic beef ranch so the flies and smells are already here! I use sweet PDZ in my poop trays. The poop scoops right out and there is no smell. I'm using pine pellets in the rest of the coop right now and if I catch a trace of an odor I sprinkle a little PDZ over the pine pellets. (Sweet PDZ is a horse stall refresher. Feed stores carry it - it's not cheap but it lasts a long time and the lack of eau de chicken poop is worth it to me!)
We have 60 mph winds regularly here and I would need to plant evergreen shrubs that were of a good size to have any wind blocking action going on.
Or I could use plywood or straw bales to block the wind. Plastic won't stay on for long with our winds. Whatever I end up doing I want to be able to see my ladies frolicking around during the day but I want them safe and comfortable too.
