If I had completely level land, I'd still use a level. Why would you not?
I'm not fond of wonky Dr. Suess buildings unless they're intended to be that way. With all the weight of a coop, if it's not level on a slope, it could begin to list downhill in strong winds, etc. Probably best to get it as level as possible, IMO.
