Coop on unlevel ground?

Thank you. There was a little settling but not much, It just shifted the doors maybe 1/2 and so now when there is moisture, the wood expands to where we have a little bit of a hard time fully closing them because they get stuck at the bottom. We are planning on just adding another 1 or two of our "posts" in the middle to help lift it up a bit.

I'm glad you have a buncha gravel-set posts in a coldish climate that have not heaved badly, but IME a whole lotta people aren't going to be as lucky with their soil type and frost depth and so forth. (Also, hand-dug holes make concrete- and gravel-set posts heave worse than power dug holes, for what it's worth).

bell bottomed holes with concrete is code for decks, porches, outbuildings etc. in all cases to the best of my knowledge.
