I'm not that good at genetics so I don't understand. Why won't any peach colored chicks be cocks like their daddy?

The color gene on sex-linked colors is carried on the area of the chromosome that the sex is on. The cock controls the color so a sex-linked colored cock is going to produce his colored hen chicks with any colored hen and all males are going to be regressive to IB split to that color.

Because in hens the gene for Peach only needs 1 copy of itself to be represented since it is on the chromosome that controls gender. In males they need two copies of the peach gene.
