Corn!!!!

This is the weekend I decided to harvest our first ever harvest of corn. We plan to can some of it, freeze some of it and make corn salsa (ideally a recipe for canning so we can pop open whenever - open to a good recipe for this!)
What should I do with the stalks when I've taken all the corn off? Leave it for now? Till it into the ground? Pull it out and compost? Use it for something else? Let me know what you do!

Horses love the stalks. If you don't have goats, cows... chop them up and throw in compost bin. You can also use them as mulch.

I let my birds (my only animals besides dogs) pick what they wanted off of it and then composted the leftovers.

My neighbors hang up and dry the stalks and sell them as fall/halloween/thanksgiving decorations.
