I am not really sure what your question is, cornish game hens are just cornish crosses that are butchered young. The males of them are roosters too.

I did not know that...I just thought they were different, like ducks, pigeons, etc.

Yes, they are just chickens.

I sure wish someone would develop a breed of chicken that had crowless roosters for those of us who can't have the crowing.
