The up sides and down sides....IMHO.
The up sides may be that it's a rare color, size, etc.. For your area.

The down side to the combination of colors listed are: Neither is color sexable, and even semi crusty folks like me, not to mention novices, tend to shy away from them. Yes, I/they, are interested in the colors on a small scale, but as far as coturnix goes this year....Brown/jumbo brown is the new black

I'm refitting my stock as we speak...I mean type.

I say charge as much as your market allows. As far as what it costs you to raise a bird, that depends on your feed cost, whether you figure your time cost in and a number of variables. It's really imposable for me to put a dollar figure on your birds, because they are worthless to me, but you could get anything in your market.
