Could I use a reptile thermostat to fix my Top Hatch Incubator?

Hi everyone! I'm new here. As a little girl I raised birds of all kinds on my farm with the help of broody hens and a little giant Inc.
I just now am back to living on the farm and am so excited to raise chickens again. I am buying some show quality eggs to incubate in my Brinsea but I have a very old Top hatch I want to use for more eggs and/ or hatcher. The problem is with the thermostat. It runs at 110 - 95 depending on how much I insulate it and where it is. But I can't get it to stay steady. So here is the question; if I buy a reptile thermostat ( like repti 500) and plug my incubator straight into that, then drop the prob into the incubator. Will it fix the temp fluctuations? It seems like a sound theory, but i wanted experienced thoughts. Thanks so much for helping me guys!
